Stuffed Dates Wrapped in Prosciutto

Stuffed Dates Wrapped in Prosciutto

16 Medjool dates, pitted

 1/3 cup soft herbed goat cheese or blue cheese

 

16 large basil leaves

 

16 strips of prosciutto, cut lengthwise in inch wide strips

 

16 tooth picks soaked in water 10 minutes     Heat broiler on lowest broil temperature. If dates are not pitted, remove pit with sharp point of paring knife. Spoon approximately 1 teaspoon of cheese into each date. Wrap in a basil leaf, then roll in a prosciutto strip. Secure with a toothpick.

 

    Broil until cheese bubbles and prosciutto crisps, turning once. About 3 to 4 minutes per side.

 

    Note: Papa’s Deli, 42nd and Thomas, sells prosciutto in approximately 3-inch wide slices. Each slice wraps 3 dates.
